FSSAI stands for Food Safety and Standards Authority of India. FSSAI is an organisation that ensures food safety in India. It is assigned with the task to provide Food licenses and Certifications to all (FBO) Food Business Operators in India. FSSAI makes sure that food articles are manufactured, stored, distributed, sold and imported safely. It is responsible for checking if the food is fit for human consumption and thereby prevent foodborne illness and injury. Its main goal is to maintain Public health through a series of mechanisms, regulations and supervision in the country.
All laws relating to food safety and science-based food quality checks are secured under the Food Safety and Standards Authority Act, 2006. The Food Safety and Standards Authority of India and State Food Authorities have been appointed for the enforcement of the above act.
Obtaining FSSAI/Food license is a legal procedure. Section 31(1) and 31(2) of the FSSA Act, 2006 requires all food businesses in India to be licensed/ registered. The registration can be done at the State or Centre level. FSSAI registration can be acquired by filing Form A for registration or Form B for State or Central license to the Food Safety Department or submitting it online through the FoSCoS portal.
The Food Safety Department then will issue a license to various Food Business Operators. On the basis of the FSSAI fees paid at the time of registration, a number is issued to be printed on the product. The fees and procedure of obtaining an FSSAI license are more extensive than FSSAI registration.

An FSSAI license is for business operators that do not classify themselves as petty food businesses. This classification between petty, state level and central level business is done on the basis of size and nature of the business and the annual income and production.

A basic registration may take up from 7-10 days from the day of filling out the application to reach you. To get a state or central license one has to wait for about 30 days.
In the case of multiple manufacturing units in different states, the company needs to get a central license and the individual manufacturing units need to have a state license of the state they are located at.
Yes, it is mandatory for all food business operators in India to get registered/ licensed by FSSAI. Operating a food business without an FSSAI certificate is a punishable offence with imprisonment of up to 6 months along with a fine extending to 5 lakh rupees. In case of a false advertisement or description, the fine for non-compliance could extend to 10 lakhs.
The validity period of the FSSAI license, depending on the type ranges from 1-5 years. Application for renewal of food license (either form A or B) should be filed 30 days before the expiry date. Any delay is subjected to a late fee of Rs.100 for each day of delay. In case the license does get expired all business activity will be immediately terminated.
